PLACE PORK ON GRILL, AWAY FROM FLAMES FOR INDIRECT COOKING. CLOSE GRILL TOP AND ALLOW TO COOK UNTIL INTERNAL TEMPERATURE REACHES 195 F, ABOUT 2 HOURS. BRUSH WITH SAUCE AND TRANSFER RIBS TO BE ABOVE THE FLAMES. GRILL FOR AN ADDITIONAL 10-15 MINUTES. REMOVE FROM GRILL AND ALLOW TO REST FOR 5 MINUTES BEFORE SLICING. CONVENTIONAL OVEN: HEAT OVEN TO 300 F. REMOVE PRODUCT FROM PLASTIC. USE A PAPER TOWEL AND PEEL SKIN FROM BACK OF RIBS. SEASON AS DESIRED AND WRAP LOOSELY IN ALUMINUM FOIL.
