GRILL: HEAT GRILL TO MEDIUM HEAT, USING BURNERS ON ONLY ONE SIDE OF THE GRILL. REMOVE PRODUCT FROM PLASTIC AND SEASON AS DESIRED. PLACE PORK ON GRILL, AWAY FROM FLAMES FOR INDIRECT COOKING. CLOSE GRILL TOP AND ALLOW TO COOK UNTIL INTERNAL TEMPERATURE REACHES 145 F, ABOUT 1.5 HOURS. REMOVE FROM GRILL AND ALLOW TO REST FOR 3 MINUTES BEFORE SLICING. STOVETOP: REMOVE PRODUCT FROM PLASTIC, SLICE INTO 1 1/2" THICK CHOPS OR 1" CUBES, THEN SEASON AS DESIRED. HEAT A SMALL AMOUNT OF OIL IN A LARGE HEAVY SKILLET OVER MEDIUM HEAT. PLACE PORK IN SKILLET, DO NOT COVER. COOK FOR 4 MINUTES BEFORE FLIPPING. CONTINUE COOKING UNTIL THE INTERNAL TEMPERATURE REACHES 145 F, ABOUT 5 MORE MINUTES (SHORTER FOR CUBES). REMOVE FROM SKILLET AND ALLOW TO REST FOR 3 MINUTES BEFORE SERVING.
