CLOSE GRILL TOP AND ALLOW TO COOK UNTIL INTERNAL TEMPERATURE REACHES 145 F, ABOUT 2 HOURS. REMOVE FROM GRILL AND ALLOW TO REST FOR 3 MINUTES BEFORE SLICING. ROASTING: HEAT OVEN TO 450 F. REMOVE PRODUCT FROM PLASTIC AND SEASON AS DESIRED. PLACE IN A SHALLOW ROASTING PAN AND COOK FOR 1 HOUR, UNTIL THE INTERNAL TEMPERATURE REACHES 145 F. REMOVE FROM OVEN AND ALLOW TO REST FOR 3 MINUTES BEFORE SLICING.
